This time pick up 3 pieces of photogenic sweets that will casually enjoy the fascinating of such materials. Let's take a camera with one hand in search of Mie's unique sweet harmony which is a treasure trove of food.

———Overturn the concept of wheat flour! 「MuGicafe」 - shop that can taste Kuwana rice cake wheat

The first place I visited was "MuGicafe" 15 minutes on foot from Kuwana station.

Kuwana is located in the mouth of Kisosansen (Kiso river, Nagara river, Ibi river) poured into Ise Bay, it is a lodging town of the Tokaido fifty-three stations that used to connect Kyo from Edo. It is a city prospered as a gateway to the Ise.

The menu you can taste at MuGicafe is a menu using "Kuwana Rice Cake Wheat" cultivated in Kuwana.

Rice Cake Wheat is a new varieties that Japan created in 1995 as a pioneer in the world, it is rich in flavor and stickiness with starchy character.

2008. Mr. Yasuda, who had been selling ingredients, was shocked by the unique texture of Rice Cake Wheat, who met through the mills in Tsu, while seeking the significance of wholesale existence.
Three people who raised in Kuwana city Rice Cake Wheat which had not been cultivated already in Tsu City and eventually wanted to make Kuwana that can be raised awareness through Rice Cake Wheat was Mr. Yasuda, a rice farmer and bread seller and the project was the Kuwana Rice Cake Wheat project.
Then the test cultivation of Rice Cake Wheat began the following year. Hiroyuki Itoh, who is a rice farmer and produces Kuwana Rice Cake Wheat, who was present at the interview, looks back then.

Kuwana Rice Cake Wheat As a project, too many people can be involved in flour changing to various foods like bread and cake, so feeling the possibility of being popularized as a famous product of Kuwana, repeated trial and error. It was in 2014 that Yasuda opened "MuGiCafe" as an antenna shop.

Right now Kuwana Rice Cake Wheat is spreading in the metropolitan area through a craft bakery as a reputation for a distinctive new texture.

The 2nd shop to introduce is 3 minutes on foot from Ise city station.
Popular CREPE, CAFE & BAR "KILLIBILLI" where you can eat authentic crepes.

In 2015, the first store in Toba was born by the owner who runs a long-established pub "Toba Kyubey". Ise store opened as the second store in 2017.

KILLIBILLI means “the point of good fishing” by the word of Aborigines in Australia. The owner who had experience living in Australia thought about the environment with Toba which is the city of the sea and named it.

Crape and drink menu with local ingredients tailored to the season line up, this time I selected Ise shop limited crepe "Ise tea Mont Blanc".

For crepe dough use Nansei eggs in southern Ise city and Aya Hikari flour from Mie Prefecture. It seems to be made the crepe with a texture that is motivated by using Aya Hikari.

When flavored salt-butter is painted in, scenty fragrance spreads in the store.

"The surface has continued pursuing a crispy texture in the inside while it is extremely refreshing that it is extremely delicious." Mr. Masatoshi Nagikawa, shop owner, speaks with a smile.

Shima-shi, Ago-cho, I visited the third store.
Kinko potato studio "Ueda shop" founded in 1974 in the Anori district where fishing industry is thriving.

Kinko potato is the name of dried potato. Dried sweet potatoes are made in the Shima district by the traditional recipe called boiled shredding recipe and have long been popular as sea ladies and household snacks since long ago. Ueda Shop is a potato farmer who sticks to raw material potatoes and cultivates it.

The soil containing plenty of minerals surrounded by the sea raises high quality sweet potatoes, and the sunny cold wind blows frequently in the Anori district is also suitable for sun drying which brings out sweetness. The former generation has stepped up mass production with the desire to distribute the Kinko potato which is said to be exceptional, even outside the area.

Currently, her daughter Mai Tachibana who runs Ueda shop together with the second generation tell us.

Tachibana: It is very difficult to mass-produce while maintaining the quality of Kinko potato with high moisture content, in the climate of Shima which is warm in high humidity, it took about 6 years to produce its own recipe.

The sweet with the finest potato is this "potato syrup soft".

The potato syrup is a rare syrup that can be produced in the course of production of Kinko potato made by boiling sweet potatoes for over 10 hours. No sugar or sweetener is used, so potato syrup which can be taken from about 100 sweet potatoes is only 250 ml.

The soft cream with plenty of its potato syrup is rich and it has a deep flavor with a synergistic effect of milk and sweet potato. It is also fun to contrast the texture of the chocolate coating and the chips.
